Mexican style avocado salad
(Serves 2)

Ingredients:-
1. Salad greens mix 10 oz preferably organic, washed and ready to eat
2. Two large tomatoes chopped
3. Two ripe avocados deseeded and chopped
4. 2 tsp garlic powder
5. 3-4 tsp original taco seasoning or to taste
6. Lime juice to taste
7. Green chilies or jalapeños chopped to taste
8. 1 tsp or to taste Tabasco sauce (optional)

Method:-
Mix everything in a large bowl. Chill and serve.

Tip:-
For a fuller meal feel free to add one can of pinto beans/black beans/kidney beans/garbanzo beans.

Quick apple and grape salad

Quick apple and grape salad
(Serves 2)

Ingredients:-
One medium apple cubed
1/2 cup red or black seedless grapes sliced
1/4 cup roasted pumpkin seeds
1/4 cup craisins
1 tbsp chia seeds
2 cups shredded cabbage, kale, broccoli and Brussels sprouts mix or any other salad mix
2 tbsp pecans
1 cup of flavored Greek yogurt. Choose whatever flavor you desire.

Method:-
Mix everything in a big bowl. Serve chilled.

Blueberry and kiwi salad

Blueberry and kiwi salad
(Serves 2)

Ingredients:-
Salad mix preferably organic 9oz
Blueberries washed about 8-10oz
One ripe avocado–peeled, deseeded and chopped into small chunks (optional)
Sprouted moong (mung bean) about one cup (optional)
1-2 tsp chia seeds
1/2 cup craisins
1 green chilli chopped (optional)
2 ripe kiwis chopped
Salt to taste
1 tsp garlic powder (optional)
2 tsp cumin powder
Lime juice to taste
Walnuts or any other nuts about 1/2 cup (optional)

Method:-
Mix all ingredients in a bowl. Enjoy!

Fruit salad with a Thai touch

Fruit salad with a Thai touch
(Serves 2)

One cup salad leaves/spinach/spring greens (preferably organic pre washed)
Two cups fresh or canned fruits
Bunch of Thai basil washed and torn
Salt to taste
Black pepper to taste
1 tsp palm sugar
Lime juice to taste
Crushed roasted peanuts (optional)
Croutons (I used the ones with Italian seasoning)

Method:-
Mix everything in a bowl. Garnish with croutons. Serve chilled.

Couscous salad

Couscous salad
(Serves 2)

Ingredients:-
One cup couscous cooked (see tip)
One medium tomato chopped
Half an English cucumber chopped (optional)
2 tbsp cabbage chopped
Salt to taste
Black pepper to taste
Lime juice to taste
Green chillies chopped to taste (optional)

Method:-
Fluff up couscous with a fork. Add the rest of the ingredients to the couscous. Mix and serve chilled.

Balsamic vinaigrette dressing can also be used in this salad if you are not counting calories.

Grilled chicken salad (with the desi touch)

Grilled chicken salad (with the desi touch)
(Serves 1)

Ingredients:-
1 lb grilled chicken breast strips, preferably organic. I used store bought but chicken can be grilled at home also. Check link below for tip.
1 cup leafy Romaine salad, preferably organic and ready to use. Any other salad can also be used
Green chillies to taste (optional)
Crushed red pepper to taste (optional)
Salt to taste
Black pepper to taste
Lime juice to taste
Maggi vegetable or chicken cube masala to taste. I used 1/8 tsp.
1 or 2 springs of scallions chopped to garnish (optional)
Walnuts or pecans to garnish (optional)
Pitted dates, preferably organic to garnish (optional)
Seasoned croutons to garnish (optional). I used the ones with Italian seasoning

Method:-
In a bowl mix the salad leaves, chicken, salt, black pepper, crushed red pepper, green chillies, lime juice and Maggi vegetable seasoning. Garnish with scallions, walnuts/pecans, dates and croutons. Refrigerate and serve.

Garlic powder can also be added to the above salad.

Strawberry cucumber salad

(A cool, summery salad)
(Serves 2)

Ingredients:-
One cup organic greens (spinach and baby kale or power greens or baby spinach and arugula or any other mix available)
5-6 Strawberries hulled, washed and chopped
One cucumber preferably English cucumber chopped
Green chillies chopped to taste (optional)
1/2 tsp chia seeds (optional)
1/2 tsp pumpkin seeds (optional)
1/4 tsp roasted cumin powder (bhuna jeera)
Chaat masala to taste. Alternatively taco seasoning mix of your choice can also be added for a Mexican taste.
1/4 tsp black salt
Salt to taste if needed
Lime juice to taste.

Method:-
Mix everything in a bowl. Serve.

Tip:-
This is an excellent lunch and can be prepared beforehand.
