Mediterranean Tzatziki
(Serves 10)

Ingredients:-
1. Two cups strained Greek yogurt
2. One cup seeded cucumber shredded or diced
3. Two tbsp lemon juice or white vine vinegar
4. Two tsp garlic powder or two cloves garlic minced
5. One tbsp chopped dill or mint leaves
6. Salt to taste
7. Pepper to taste preferably white pepper but black would also be fine
8. 1/2 tbsp olive oil

Method:-
If not using strained yogurt, strain yogurt for 30min-3hours using a cheesecloth or coffee filter to drain out excess water. Skip this step if using store bought strained yogurt. You can skip this step also if you are in a hurry. Shred cucumber, mix some salt and keep aside. After 10 mins squeeze out excess water and mix this cucumber in the yogurt. Add garlic, lemon juice, mint/dill leaves, olive oil, salt and pepper and mix everything well. Mediterranean Tzatziki is ready to serve.

Tip:- This can be served with pita chips, veggies, can be applied on gyros, buns, breads etc to make yummy sandwiches/foldwiches. Remember to keep it refrigerated.

Homemade salsa

Homemade salsa
(Serves 4)

Ingredients:-
1. 7-8 big ripe tomatoes, washed and chopped
2. One medium onion chopped
3. Two garlic cloves chopped
4. 1/2 cup cilantro washed
5. 1-2 jalapeños deseeded and chopped
6. Salt to taste
7. Sugar to taste (optional)
8. Lime juice to taste
9. 1/2 cup spaghetti sauce (optional)

Method:-
Blend everything together in a food processor. Store in an airtight bottle in the refrigerator. If adding spaghetti sauce, this will have a shelf life of a month. Else try finish in a week.

Tip:-
For a healthier version add parsley too and skip spaghetti sauce. Spaghetti sauce, however, gives a nice red color to it.

Dry garlic chutney

Dry garlic chutney

Ingredients:-
1. 1/2 cup dry grated coconut
2. 1 tsp oil
3. 1 tbsp toasted sesame seeds
4. 1 tbsp roasted peanuts
5. 4-5 tsp dry garlic powder or 8 garlic cloves chopped
6. Red chilli powder to taste. I use 1 tsp red chilli powder
7. Salt to taste
8. 1 tsp tamarind paste

Method:-
Fry coconut powder for 2-3 minutes on medium heat in a pan till it gives out a distinct aroma. Keep aside. Now heat oil in the same pan. Add garlic cloves and fry for 2-3 minutes or till translucent. If using garlic powder skip this step. After coconut cools a bit add the rest of the ingredients and pulse in a food processor. Dry garlic chutney also called Vada pav chutney is ready.

PS- Besides Vada pav this chutney can be used to make veg sandwich, veg burgers etc or can simply be enjoyed with any South Indian meal.

Chilli garlic sauce

Chilli garlic sauce
(Serves 2)

Ingredients:-
2 tsp oil
One tbsp minced or chopped garlic
1/2 tbsp chilli flakes or to taste
1 tbsp tomato ketchup
Salt to taste
One cube Maggi vegetable or chicken seasoning
3 tbsp soya sauce
1 tbsp white vinegar

Method:-
Heat oil in a pan. Add garlic and fry till it caramelizes a bit. Add chilli flakes and toss for about 1/2 a minute. Add tomato ketchup, salt, maggi seasoning and mix. Add soya sauce and white vinegar and mix again. Bring to a boil and keep boiling while stirring occasionally till it thickens a bit. Serve with potstickers or chicken bites.

Tamarind chutney

Tamarind chutney

Ingredients:-
2 tbsp tamarind paste
8-10 tbsp jaggery powdered
8-10 seedless dates pulsed
1 tsp cumin powder
1 tsp garam masala powder
2 tsp saunf or fennel powder
1 tsp salt
1 tsp red chilli powder (optional
2 cups water

Method:-
Mix everything and blend in a food processor. Now put on medium heat and let it come to a boil. Keep stirring occasionally till the chutney thickens up and starts sticking to the sides of the pan. Turn off the gas and let the chutney cool down. Refrigerate and use when needed.

Tip:-
This chutney has an excellent shelf life.
It goes well with a lot of popular Indian snacks like samosas, pakodas or any other kind of fritters.

Cilantro chutney

Cilantro chutney
(Serves 12)

Ingredients:-
One bunch or two cups cilantro washed and coarsley chopped
2 tbsp ginger chopped
1/2 tbsp garlic chopped
Green chillies to taste
Salt to taste
Lime juice to taste

Method:-
Add everything in a blender/mixer and pulse. Add a little water to help run the blender.

Amiya pudine ki chutney

Amiya pudine ki chutney

Ingredients:-
Two raw green mangoes (kache aam)
A handful of mint leaves washed
1 cup cilantro washed (optional)
Green chillies to taste
Salt to taste
1 tsp roasted cumin powder (bhuna jeera)
2 tsp black salt

Method:-
Peel, wash, deseed the raw mangoes and cut out the flesh in cubes. In a mixer put these along with green chillies, spices, salt, mint leaves and cilantro. Blend and do a taste test. If needed add more salt.
